tough day :-( but good that you finished. "I could have" means you didn't - It's like "nemureta hazu datta". Like "If I finished the assignment earlier, I could have slept 8 hours" (but you didn't). So in this case, "I slept only 3 hours" - makes sense?

or if you want to emphasize "3 hours", then you can also say "I got only 3 hours of sleep last night" :-)
